Jerusalem Artichoke

Helianthus tuberosus

vegetable

Jerusalem artichokes are hardy perennials grown for their knobby underground tubers, not true artichokes. They are vigorous, sunflower-like plants that produce bright yellow flowers in autumn and are extremely cold-hardy and low-maintenance once established. They spread readily and can become invasive.

Care Guide

light_mode
Light
Full sun (6–8 hours minimum) for best tuber production and flowering.
water_drop
Water
Drought-tolerant once established; water moderately during growing season. Approximately 1 inch per week. Overwatering can lead to rot.
compost
Soil
Tolerates poor to average soil; prefers well-draining loam. pH 5.5–7.5. Amend with compost to improve structure. Performs well even in neglected sites.
science
Fertiliser
Light feeder; minimal fertilizer needed. Light application of balanced fertilizer (5–5–5) in spring sufficient. Excessive nutrients promote foliage over tubers.
thermometer
Temperature
Very cold-hardy perennial; thrives in cool to moderate temperatures. Requires winter dormancy and frost exposure for tuber development.
humidity_percentage
Humidity
Low to moderate humidity tolerated. Prefers drier conditions; avoid overhead watering and humid environments.
