Kohlrabi is a quick-growing brassica that produces a swollen stem (knob) above ground with a mild, turnip-like flavor. It matures in 45–60 days and is more cold-tolerant than heat-tolerant, making it ideal for spring and fall gardens. Both the stem knob and tender leaves are edible.
