Samphire

Crithmum maritimum

vegetable

Samphire, also called rock samphire or sea fennel, is a salt-tolerant succulent with thin, needle-like leaves that offer a crisp, salty, mineral flavor prized in gourmet cuisine. Native to rocky coastal regions, it thrives in poor, well-drained soils and tolerates salinity that would harm most plants. The plant develops a woody base as it matures and can live for several years.

Care Guide

light_mode
Light
Full sun (6–8 hours daily); requires bright light for optimal flavor and growth.
water_drop
Water
Water sparingly; allow soil to dry significantly between waterings; drought-tolerant once established; excessive moisture causes rot.
compost
Soil
Well-draining, poor to moderately fertile soil; tolerates sandy, gritty, or rocky soil with pH 6.0–7.5; add perlite or sand for drainage.
science
Fertiliser
Minimal or no fertilizer needed; poor soil is acceptable; excess nutrients reduce salt tolerance and flavor intensity.
thermometer
Temperature
Cool to moderate; prefers 50–70°F; frost-hardy to about 20°F; dislikes sustained heat above 80°F.
humidity_percentage
Humidity
Low humidity (20–40%) preferred; excellent air circulation prevents fungal issues; salt-tolerant foliage.
